Cheesy Chicken Enchiladas

These Cheesy Chicken Enchiladas are not particularly allergy friendly, but they do not contain eggs or nuts.  Watch the tortillas, because most do contain soy.  I wanted to include this recipe simply because I used to take it to potlucks frequently and was often asked for the recipe.  I generally use whatever cheese I have on hand, and puree the green chilis since my family is not a fan of chunks of, well, pretty much anything except meat.

It’s a great meal to take to people after a birth or surgery since you can take it prepared but not baked and they can bake it whenever it’s convenient for them (plus you don’t have to make the mad rush to get to their house before the food gets cold =). Just remember to write the baking instructions and include the topping cheese and green onions.  This meal also freezes well.  Just allow enough time to thaw before baking or you’ll end up with a cold middle.
